Backcountry Recipes

I’ve divided these recipes into Breakfasts and Dinners, but I’m not strict about that classification. I’ve been known to eat the previous night’s leftovers for breakfast, especially when I’m testing new recipes and overestimate portion size. (I’d rather have a cold breakfast of unfinished peanut noodles than carry them on my back the rest of the trip.) Ultimately you should eat whatever works well for you out there, whether that’s oatmeal for dinner or pancakes for lunch or pesto noodles for breakfast. Or maybe you don’t cook at all, and you eat gorp three meals a day! Whatever gets you up over the next pass.

Similarly, I encourage you to tweak these recipes to suit your own particular tastes and dietary needs. Make them vegetarian or vegan. Leave out the spicy bits. Add more spicy bits. Add cheese — or more cheese.
